- 1 lb lean ground beef or ground turkey
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 bell peppers (any color), chopped
- 3 cloves garlic, minced
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 2 cups cooked rice (white or brown)
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- Salt and pepper, to taste
- 1½ cups shredded mozzarella or cheddar cheese
- Fresh parsley, optional

DIRECTIONS
- Heat olive oil in a large skillet over medium heat.
- Brown the ground beef with the onion until cooked through. Drain excess grease if needed.
- Stir in the chopped peppers and garlic. Cook for 5–7 minutes until peppers begin to soften.
- Add the diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and pepper. Simmer for 10 minutes.
- Stir in the cooked rice.
- Sprinkle cheese over the top, cover, and cook 2–3 minutes until melted.
- Garnish with parsley and serve.
