Protein Pancakes

INGREDIENTS

Wet ingredients:

  • 3 eggs
  • 1/2 c cottage cheese
  • Dash of vanilla

Dry ingredients:

  • 2/3 c flour
  • 1/3 c vanilla protein powder
  • 1 tablespoon sweetener of choice we used monk fruit
  • 1 teaspoon baking powder
  • One pinch of salt

DIRECTIONS

  1. Mix all the wet ingredients.
  2. Add in the dry ingredients.
  3. Pour ¼ cup of batter on preheated, buttered skillet. Cook until bubbly. Flip and cook until brown and bubbly.
  4. Enjoy!

OPTIONAL MIX-INS

  • mini chocolate chips
  • white chocolate chips
  • chopped strawberries
  • blueberries
  • vanilla yogurt on top

Smaller, frequent meals are easier to tolerate in heat than large, heavy meals. Pair carbs + protein (like yogurt and fruit, a smoothie with some peanut butter, or crackers with hummus) to maintain energy and prevent fatigue.
